One Potato Quick Curtido Slaw
Tools: Kettle, Mesh Strainer, Medium Mixing Bowl
Ingredients:
Boiling Water
½ Head Cabbage, finely shredded
½ Red Onion, very thinly sliced
2 Carrots, finely shredded
½ cup Lemon Juice
¼ cup Vegetable Oil
¼ cup Sugar
½ teaspoon Guajillo Chile (ground)
1 tablespoon Cilantro, finely chopped
Salt, to taste

Directions:
Bring water to a boil in a kettle. Place shredded cabbage in a mesh strainer, and very slowly pour boiling water over cabbage. While pouring water, use tongs to carefully toss to cover in hot water.Â
Rinse cabbage with cold water, then transfer to a clean kitchen towel. Press out as much water as possible.Â
Place cabbage in a large bowl and add the carrots and onion. Add the lemon juice, vegetable oil, sugar, and guajillo, and cilantro. Toss well to combine.Â
Allow to marinate for several hours or days (ideally), but you can serve immediately.
Pro Tips
Storage: You can store curtido in an airtight container or mason jar for up to 1 week in the fridge. This dish goes great on our One Potato arepas.Â
Hold the Cilantro: Some individuals have a genetic variation that affects how cilantro tastes - describing it as eating soap. Or, maybe your kids just don’t like it. If you or your kids don’t like cilantro, there is no need to include it at all! Flat Italian parsley can be a nice substitute to add color and a more subtle flavor.
